We love this bubbly cocktail for its simplicity and also its ability to easily be converted to a non-alcoholic drink for those who abstain and for the kids to have fun with too.
One of this cocktail's two ingredients is a shrub. Shrubs are easy to make but a bit time-consuming, so you must think ahead for this cocktail. They are one of our favorite ingredients because they bring flavor, sweetness, and acidity to a cocktail and they can be stored safely for a long time.
1.5 oz. Pomegranate-Blood Orange-Rosemary Shrub
4 oz. Prosecco or other Dry Sparkling Wine
Add chilled shrub to a champagne flute
Top with sparkling wine
Garnish with dehydrated blood orange wheel or pomegranate arils and a sprig of rosemary.
1 pomegranate worth of Pomegranate Arils
2 Blood Oranges, sliced
1 handful of fresh Rosemary
2 cups of Sugar
2 cups of White Wine Vinegar
In a food-safe container with a lid, add pomegranate arils, blood orange slices, rosemary, and sugar.
Stir to coat all of the fruit in sugar.
Let the mixture sit for 24 hours to extract all of the juices.
Add the vinegar, stir daily to break down the sugar.
Let the Shrub sit for at least 5 days before straining the fruit out. This will let the flavors from the fruit infuse and the vinegar mellow out.
After 5-7 days, strain into a jar and store in the refrigerator for up to 4 months.
